What to say in a birthday letter

One thing to skip: Avoid "hope you have a great day" as the whole message. Say what you actually think of them — a birthday is a rare licence to be sincere without explanation.
The difference one specific line makes

“Happy birthday! Hope you have an amazing day, you absolutely deserve the best.”
Write this instead
“You are thirty-four today. This is the year you learned to say no to people, and I have watched you do it about six times, badly at first.”
Why it works: A birthday message describes the day. A birthday letter describes the year. The second version tells somebody something about themselves they cannot see from inside their own life.
